The beef and the lamb are custom processed the way you want them.
- How it's sold
- Beef is a quarter, a half, a three-quarter, or a whole. Lamb and wool are upon request.
- Your cut
- Custom processed the way you want it, for the beef and the lamb. You choose the steaks, roasts, and ground beef. Lamb is cut the way you ask.
- Hanging weight
- For beef, the carcass after the hide, head, hooves, and organs are gone, before it is cut. A quarter is often about 100–150 pounds. Call for the weight we have now.
- Price
- All prices are subject to change. By serving a core group of people we have remained with consistent pricing. Essentially, we beat or match average grass-fed market reports prices released quarterly for public.
- Processors
- Custom processing via The Country Butcher Shop in Palmyra, Missouri or Dawning Day Processing in Clayton, Illinois.
- Delivery
- Custom orders within a reasonable distance can be arranged.
- Paid at pickup
- Butcher fees go to the processor, not the farm. Additional USDA fees may apply if requested when the beef is processed in Palmyra.
